These particular 3.5mm terminal blocks are our favorite: big enough for a range of wire gauges, easy to adjust with a screwdriver, and not too chunky. The only down-side is that they do not fit into 2.5mm spaced holes (they're 3.5mm spaced) - but they do fit in most perf/proto-board if you rotate them diagonally.

This potentiometer is a two-in-one, good in a breadboard or with a panel. Its a fairly standard linear taper 10K ohm potentiometer, with a grippy shaft. Its smooth and easy to turn, but not so loose that it will shift on its own.

The 74LVC245 is designed so that even when it runs at 1.8V, it still happily accepts 5V signals in one pin and converts it to a lower logic level on the opposite pin. This chip is only for digital signals, it doesn't convert analog signals (you need an op amp for that).
